A highlight for me was
attending a cooking class with El Frijol Feliz
(The Happy Bean) Cooking School. We arrived early and were given long blue aprons to wear, then led into
the kitchen where our group of 8 people
stood behind a table where each place
was laid out with a chopping board and an enormous knife. Although I understand some Spanish, I asked
the teach if she spoke any English. “Yes”
she said and then proceeded to conduct the whole lesson in Spanish. It was all fine though as we she explained
everything clearly through her actions so
we proceeded to peel, chop, mix, boil and fry a variety of foods – some familiar
and some not. The best bit of course was
the eating. Between us we had cooked a
wonderful banquet and the best meal we had had here. Our banquet consisted of: Guacamole,
Tortillas, a chicken/veg stew, vegetable rice and an unusual doughnut type
dessert, all washed down with lashings of beer – Delicious.

Another
highlight for John was climbing a volcano, which despite a very early 5 am start,
rain, wind and fog, John was rewarded with both a sense of achievement and a
marshmallow toasted on the heat of the volcano.
What was I doing whilst John was
climbing the volcano. Having a wonderful
lie in and then a very civilized breakfast of Mexican Eggs in the local café.
